Ingredients: For the Couscous: – 1 cup couscou – 1 1/4 cups vegetable broth or water – 1 tablespoon olive oil – 1/2 teaspoon salt

For the Curried Dressing: – 1/4 cup olive oil – 2 tablespoons lemon juice – 1 teaspoon curry powder – 1/2 teaspoon ground cumin – 1/2 teaspoon ground coriander – 1/4 teaspoon turmeric

For the Salad: – 1 cup diced cucumber – 1 cup diced bell pepper (any color) – 1/2 cup diced red onion – 1/4 cup chopped fresh cilantro

– 1/4 cup chopped fresh mint – 1/4 cup raisins or dried cranberries (optional) – 1/4 cup chopped roasted almonds or cashews (optional) – Salt and pepper, to taste

Cooking the Couscous: 1. In a medium saucepan, bring the vegetable broth or water, olive oil, and salt to a boil. 2. Stir in the couscous, cover the saucepan with a lid, and remove it from the heat.
