a variety of foods, including vegetarian burritos and other such items

Ingredients: – 2 medium-sized beetroots, boiled and grated – 1 cup boiled and mashed potatoe – 1/2 cup finely chopped onion – 1/4 cup finely chopped coriander leave – 2-3 green chilies, finely chopped (adjust to taste) – 1 teaspoon ginger paste – 1 teaspoon garlic paste – 1 teaspoon cumin powder

– 1 teaspoon coriander powder – 1/2 teaspoon garam masala powder – Salt to taste – 1 tablespoon corn flour or besan (gram flour) – 1 tablespoon breadcrumbs (optional, for binding) – Cooking spray or oil for greasing

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil and lightly grease it with cooking spray or oil.

In a large mixing bowl, combine the grated beetroot, mashed potatoes, finely chopped onions, coriander leaves, green chilies, ginger paste, garlic paste, cumin powder, coriander powder, garam masala powder, and salt. Mix well to combine all the ingredients.

Add the corn flour or besan (gram flour) to the mixture and mix thoroughly. The flour helps to bind the ingredients together. If the mixture seems too wet, you can add breadcrumbs gradually until it reaches a consistency that is easy to shape into kebabs.

Take small portions of the mixture and shape them into oval or cylindrical kebabs using your hands. Place the shaped kebabs on the prepared baking sheet, leaving some space between each kebab.

Lightly spray or brush the kebabs with cooking spray or oil to help them brown and crisp up in the oven.

Bake the beetroot kebabs in the preheated oven for 25-30 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy on the outside.

Once the kebabs are cooked through and crispy, remove them from the oven and let them cool slightly before serving.

These low-fat beetroot kebabs are flavorful, nutritious, and guilt-free, making them a perfect appetizer or snack option for those looking to enjoy a healthier version of traditional kebabs. They are also great for vegetarian or vegan diets and are sure to impress your guests with their vibrant color and delicious taste!
